Cinnamon Apple Pancakes with Homemade Apple Syrup

While trying to find some new toppings for pancakes, I created this recipe and we fell in love. My little ladies gobbled them up! Plus, you get an added bonus from making these- your house will smell like delicious apples and cinnamon all day! :)

Pancakes:

1/2 an apple diced into very small pieces
2 tsp. cinnamon
1/4 cup brown sugar
1/8 cup of warm water

Box of pancake mix (you can make your own mix if you wish, but the boxed kind that you just add water to works great.)
Water

Dice apple, and mix together in small sauce pan with cinnamon, brown sugar, and 1/8 cup of water. Cook over med. heat just until the apples start to become tender. This usually only takes about 4 or 5 minutes. In separate bowl, mix pancake mix with water according to package directions for 12-18 pancake serving size. Mix in apple mixture. Cook pancakes on griddle at 350 degrees until golden brown.


Syrup:

1 cup of sugar
1 cup of warm water
1/8 tsp. cinnamon
1/2 an apple sliced into very thin slices

In small sauce pan, stir together sugar and water. Heat over medium heat until it reaches a rolling boil, stirring constantly. Turn heat to low, and add in apples and cinnamon. Cook over low heat for 5-6 minutes. Remove from heat and syrup will thicken upon standing.
